Orange Roasted Potatoes

My own recipe.  I first made these back in 1998, when I first moved to Temecula.  I was trying to find ways to make potatoes more interesting.  We love these with grilled chicken or steak.

2 tablespoons olive oil
1 teaspoon finely grated orange peel (use a microplane grater)
1 clove garlic finely grated 
1/2 teaspoon dried rubbed sage
1/4 teaspoon grond pepper
1 teaspoon salt
4 large red potatoes, cut each into 8 wedges

Preheat oven to 425 degrees.  
Mix olive oil, orange peel, sage, garlic and salt and pepper in a medium bowl.  
Add potato wedges and toss to coat.  Transfer potatoes to a baking sheet lined with aluminum foil. Bake until crisp and brown, burning once, about 40 minutes.  

Serves 4.
