Fabulous Flank Steak



This recipe is inspired by my friend Bobette, who not only is a fabulous cook, she's an amazing event planner.  She is the queen of weddings in our town.  This is my favorite marinade for flank steak or pork chops.  It's a crowd pleaser served with a great salad and a side of rice or quinoa.

1/2 cup avocado or olive oil
1 bunch green onions, minced
2 cloves garlic, grated fine
2 teaspoons dry mustard
1/2 cup soy sauce
4 teaspoon red wine vinegar
4 tablespoons brown sugar
1 1/2 teaspoons dried basil
1/2 teaspoon pepper
1/4 teaspoon red pepper flakes
1-1/2 pounds flank steak

Combine all of the ingredients, except the meat and mix well.  Pour the marinade into a resealable plastic bag.  Add the steak and seal the bag.  Marinade in the refrigerator overnight.  Remove the steak from the marinade and let it come to room temperature before grilling.

Microwave the marinade for 3 minutes to kill any bacteria.

Grill steak 6-7 minutes on each side. Remove from heat and let rest for 10 minutes before cutting against the grain into thin strips.

To serve, I like to place the steak over rice or quinoa and pour a little marinade over the top.
