I Make a Mean Grilled Cheese

Seriously. This is a tried and true way to make the best grilled cheese sandwich ever. Just ask the people who attended the 2015 Blue Lily Reunion. They will testify. 

Good bread is essential. If you can get your hands on Grandma Sycamores bread, it's pretty tasty. If not, a good sour dough works well. 

This recipe is for 4 sandwiches. 

You will need:

8 slices of good bread 
2 cups sharp Cheddar cheese, grated
1 teaspoon finely grated onion 
1/4 teaspoon fresh ground pepper
2 tablespoons mayonnaise
Butter or coconut oil
2 teaspoons finely grated Parmesan cheese
Cookie sheet
Aluminum foil

Preheat oven to 400 degrees.  You are going to bake. NOT broil. 

Line the cookie sheet with foil. 

Mix butter with the Parmesan cheese. Butter one side of each slice of bread. Set aside. 

In a mixing bowl, combine the cheese, onion, mayo and pepper. Mix well. 
Place 4 slices of bread on the cookie sheet buttered side down.
Scoop 1/2 cup cheese and place on each slice of bread. 
Spread the cheese evenly over the bread and top with another slice of bread, butter side up.

Place the cookie sheet in the oven and bake for 8-10 miniutes, until the bread is toasted a golden brown.

Remove from oven and transfer the sandwiches to a plate. Let them sit for a minute or two before cutting. 

If you want to bump up your grilled cheese experience add any of the following:

Pesto and a slice of tomato
Apple & Brown Sugared bacon 
Ham and Nina's Jalapeno Jelly
