1 cup port wine
1/3 cup sherry wine vinegar
3 tablespoons sugar
1/4 teaspoon ground nutmeg
1/3 cup grape seed oil (or vegetable oil)
1/2 cup good crumbled feta cheese
Combine the Port, sherry vinegar, sugar and nutmeg in a saucepan. Boil over high heat until sugar dissolves and misture is reduced to 2/3 cup -- about 12 minutes. Let cool.
Transfer mixture to a blender. With the machine running, add the oil. Blend. Add Feta. Blend to combine.
