Spinich, Mint and Goat Cheese Salad with Honey Mustard Dressing

My own recipe.

1 bag pre-washed spinach, stems removed
1 bunch green onions (white part only), chopped
½ carton cherry tomatoes, halved
1 carrot, shredded
1 tablespoon fresh mint, chopped fine
¼ cup raisins or dried cranberries
¼ cup toasted pecans
¼ cup goat cheese, crumbled
herb flavored croutons

Place the above ingredients in a large salad bowl. Toss with 1/3 cup of dressing. Add more dressing to your liking.


Dressing:

1 cup mayo
1 tablespoon vegetable oil
juice of 1 lemon
¼ cup honey
¼ cup rice vinegar (if not available, use another lemon)
¼ cup Dijon style mustard
pinch salt
dash Worchestershire
