Benedict Strata

This reciepe comes from my friend Erin Fox. She made this for our Book Club in 2008. It was a huge hit with all of us. I recommend it for a holiday brunch.

1 package (12oz) English muffins
8 slices (4oz) Canadian bacon, chopped
12 eggs1 1/2 cups milk
4 Tablespoons mayo
2 teaspoons lemon peel
4 Tablespoons lemon juice
Chives optional
2 pakages Knorr Hollandaise sauce

Split muffins and cut into cubes. Alternate even layers of muffin cubes and ham in lightly greased baking dish.

In med. bowl, beat eggs, milk, mayo, lemon peel and juice until well blended. Pour evenly over ham-muffin mixture. Cover. Refrigerate overnight.

The next morning, uncover strata. Bake at 350 degrees for 50-60 minutes until golden brown.

Just before serving, prepare the 2 packages of Knorr Hollandaise sauce as directed. Spoon over the strata. Sprinkle with chopped chives.

Serves 8.
